For the Cake Layers:

  • 250g self-raising flour
  • 250g caster sugar
  • 250g unsalted butter, softened
  • 4 medium eggs
  • 1 tsp vanilla extract

Method:

  1. I have always wanted to know how they make those amazing ice cream cakes. I am not much of a baker, but I sure have always wanted to try this.

    I am rather impatient so sometimes it is hard for me to wait until things are properly ready to be assembled! Sometimes it is even difficult to wait for the cake to bake! I do sit and read while I wait and that tends to make the time go somewhat faster.

    I had not thought of the cling wrap to separate the layers of ice cream and cake. Once frozen, does the ice cream easily come off? I am a klutz in the kitchen and  can burn water, so I just want to know if there is scraping or anything to get the ice cream layers between the cake layers.

    The instructions are pretty clear. I think I could even make one of these. I want to surprise my granddaughter with one just for fun.
