Here’s an easy-to-follow recipe for you to try out:

  • 250ml double cream
  • 125ml whole milk
  • 80g granulated sugar
  • 60g unsweetened cocoa powder
  • Pinch of salt
  • 115g dark chocolate, finely chopped
  • 1 teaspoon vanilla extract

Instructions:

  1. In a medium saucepan, whisk together the cocoa powder, sugar, and salt. Gradually whisk in the milk until the mixture is smooth and well combined.
  2. Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly. Remove from heat once it’s hot, but not boiling.
  3. Add the finely chopped dark chocolate to the hot mixture. Stir until the chocolate is completely melted and the mixture is smooth.
  4. In a separate bowl, whisk the double cream and vanilla extract together.
  5. Gradually whisk the cream mixture into the chocolate mixture until well combined.
  6. Allow the mixture to cool to room temperature, then cover and refrigerate for at least 2 hours, or preferably overnight. Chilling the mixture thoroughly will help develop the flavours.
  7. Once chilled, give the mixture a good stir and then pour it into an ice cream maker.

Every 30 minutes, stir the mixture vigorously with a fork to break up ice crystals, repeating this process for about 3-4 hours or until the ice cream is firm.   9. Transfer the churned ice cream to an airtight container and freeze for an additional 2-4 hours, or until firm.
