When Life Gives You Lemons Make Homemade Lemonade Ice Lollies image 1 one whole lemon and half a sliced lemon with leaves white background frosted fusionsLemons aren’t simply a bright, tangy addition to drinks and various sweet and savoury dishes – these little citrus fruits pack a serious nutritional punch too. Beyond their mouth-puckering flavour, lemons are brimming with an array of vitamins, minerals, and plant compounds that can benefit your health in numerous ways.

Here are some of the key health benefits of lemons:

Support heart health:

  • Lemons are a good source of vitamin C, fibre, and plant compounds like hesperidin and diosmin which may help lower cholesterol levels and reduce risk factors for heart disease.

Aid weight management:

  • The soluble pectin fibre in lemons may promote feelings of fullness and delay the digestion of sugars, which could potentially aid weight loss. Lemon compounds may also help prevent or reduce weight gain.

Prevent kidney stones:

  • The citric acid in lemons may help increase urine volume and bind to calcium oxalate, preventing the formation of kidney stones.

Antibacterial effects:

  • The citric acid in lemons has antibacterial properties that can kill harmful bacteria and act as a natural preservative.

Boost immune function:

  • As a rich source of vitamin C, lemons may help strengthen the immune system and protect against illness.

Promote digestive health:

  • The soluble fibre pectin in lemons can improve digestive health and promote regular bowel movements.

May help prevent anaemia:

  • Lemons contain vitamin C which improves the absorption of iron from foods, potentially preventing iron deficiency anemia.

Skin benefits:

  • Vitamin C is needed for collagen production and may help reduce skin damage from sun exposure and ageing.

So in summary, lemons provide vitamin C, fibre, citric acid and plant compounds that offer antioxidant, antibacterial and potential anti-inflammatory benefits for heart, kidney, digestive and skin health. Certainly makes sense to use them for our Homemade Lemonade Ice Lollies!

  • 4-5 fresh lemons
  • 1 cup (240 ml) water
  • 1/2 cup (100 g) granulated sugar or honey (adjust to taste)
  • Optional: a few fresh mint leaves for added flavour

Instructions

  1. Prepare the Lemons: Start by washing the lemons thoroughly. Cut them in half and squeeze out the juice into a bowl. You should get about 1 cup (240 ml) of lemon juice. Remove any seeds.
  2. Make the Lemonade Base: In a small saucepan, combine the water and sugar (or honey). Heat over medium heat, stirring occasionally, until the sugar is completely dissolved. Remove from heat and let it cool slightly.
  3. Mix the Lemonade: In a large jug, combine the freshly squeezed lemon juice and the sugar-water mixture. Stir well to combine. If you like, you can add a few fresh mint leaves for an extra burst of flavour.
  4. Fill the Moulds: Pour the lemonade mixture into ice lolly moulds, leaving a little space at the top for expansion. Insert the sticks and place the moulds in the freezer.
  5. Freeze: Allow the lollies to freeze for at least 4-6 hours, or until completely solid.
  6. Enjoy: Once frozen, remove the lollies from the moulds by running warm water over the outside of the moulds for a few seconds. Enjoy your homemade lemonade ice lollies straight away!

Lemon Lollies FAQs

We often get questions from those looking to make these refreshing homemade treats, many of which are of the same ilk, so we’ve listed a few Lemony Q’s & A’s:

  • Can I use bottled lemon juice?
    • For maximum fresh, zingy flavour, I’d really recommend squeezing those lemons yourself. But bottled juice can work too.
  • How long until they’re frozen?
    • It can take anywhere from 4-6 hours depending on your freezer. I usually just pop ’em in overnight for perfect icy treats in the morning.
  • How long can I keep them?
    • These lemon lollies will last for 2-3 months in the freezer. But they’re so irresistible, it’s unlikely they’ll last that long!
  • Can I reduce the sweetener?
    • Absolutely! Start with less sugar/honey and add more to taste. Or for that super tart zing, leave it out altogether.

Pucker up and embrace the lemon with these tangy-sweet frozen treats! The perfect way to beat the heat and treat your taste buds.

  3. Thank you for this information and idea packed blog post. I didn’t realise the humble lemon had so many health benefits. Some of the other fruits you have suggested would combine nicely with lemon to give a more complex ice lolly. Have you tried adding herbs, mint is the first one that comes to mind but lavender and coriander could also work. You’ve inspired me to experiment.

    • Hi Lyn,

Thanks for your comment. Glad that you enjoyed our article.

Yes, the humble Lemon! Amazing what gifts nature has given us isn’t it? And agreed there are many other fruits that can add to and enhance lemons in the lollies. Most frequently I’ll just add chopped-up strawberries, raspberries etc to my lollies, to add some texture and additional flavour.

Herbs? Yes, I will often add some herbs, as you say these can add interesting flavour profiles.

If you haven’t had the chance, please do check out our article – Lavender and Honey Ice Cream: A Unique and Fragrant Fusion – where you’ll see we have used Lavender in ice cream. A wonderful combination with Honey which works very well and of course there’s also our – Homemade Mint Chocolate Chip Ice Cream – a classic favourite incorporating herbs.

One other less likely recipe we have tried in ice cream format, which is curious, to say the least is Apricot and Thyme. Quite a unique flavour profile. Check out our article here – Homemade Apricot and Thyme Ice Cream Recipe.

Do let us know how you get on with your experiments!

Once again, thanks again for sharing your thoughts.

      All the best

      Cherie :o)
