Coconut Curry Ice Cream Recipe

This fusion of flavours offers a curious twist on traditional ice cream, combining the richness of creamy coconut, the sweetness of ice cream along with the warmth of aromatic spices. Quite a unique flavour combination, but one that will take you by surprise.

Here’s what you will need:

  • 400ml (1 can) coconut milk
  • 200ml double cream
  • 100g caster sugar
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • Pinch of salt
  • Toasted Coconut flakes to garnish (optional)
  • Chopped nuts to garnish (optional)
  • Curry leaves to garnish (optional)

Instructions:

  • Prepare the Base:
    • In a saucepan, combine the coconut milk and double cream over medium heat. Stir gently until well combined and heated through, but do not boil.
  • Add Sugar and Spices:
    • Gradually stir in the caster sugar until it dissolves completely. Then, add the curry powder, ground turmeric, ground ginger, and a pinch of salt. Continue stirring until the spices are fully incorporated into the mixture.
  • Infuse Flavours:
    • Allow the mixture to simmer gently for about 5 minutes, stirring occasionally to infuse the flavours. Taste and adjust the seasoning if needed.
  • Chill the Mixture:
    • Remove the saucepan from the heat and let the mixture cool to room temperature. Once cooled, cover the saucepan and refrigerate the mixture for at least 4 hours or overnight to chill thoroughly.
  • Churn the Ice Cream:
    • Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
      • NB: If you don’t have an ice cream maker, you can still make this recipe. Pour the mixture into a freezer-safe container and freeze. Every 30 minutes, stir the mixture vigorously with a fork to break up any ice crystals that are forming, repeating this process for about 3-4 hours or until the ice cream is firm.   • Freeze:
    • Transfer the churned ice cream into a freezer-safe container and smooth the top with a spatula. Cover the container with a lid or plastic wrap and freeze for at least 4 hours or until firm.
  • Serve and Enjoy:
    • When ready to serve, remove the ice cream from the freezer and let it sit at room temperature for a few minutes to soften slightly. Scoop into bowls or cones and enjoy the unique and exotic flavours of Coconut Curry Ice Cream!

Tip: For an extra indulgent treat, garnish the ice cream with toasted coconut flakes, chopped nuts or a sprinkle of crushed curry leaves before serving.

Our homemade coconut curry ice cream may sound rather bizarre, but you’ll be surprised just how well these flavours work together. It’s literally like a frozen sweet curry!

You can add sultanas for additional sweetness and texture, or perhaps some dried mango, these additional toppings can really lift the flavours and experience.

Of course, you can tailor the level of spice to your own preference by using less or perhaps more of the spices, the choice is yours, but this is a truly unique, quite delicious flavour fusion!

      Coconut Curry – it is a bit out there and not everyone’s cup of tea, but I love the fusion, taking known flavours and bringing them together in ice cream. It’s a bit of a play with the mind, but a fun one.

      Yes, all the flavours we’ve shared are quite unique, but in a very good way!

      Glad that you found the step-by-step instructions easy to follow, that’s great to hear. We want everyone to be able to enjoy ice cream, whether you have an ice cream maker or not, hence making sure we provide directions for those with or without ice cream makers. Everyone should be able to enjoy wholesome and healthy ice cream! 

      Where do I get my inspiration?? I get my inspiration from everything – Lavender and Honey, I watched bees surrounding a lavender plant and I thought Nature was telling me this would work, so let’s give that combo a try. The Bacon and Maple syrup came about when I was cooking some bacon for my son and I thought, hmm, could I? Would it work? And being the ice cream-loving experimentalist that I am, I gave it a go. It took a couple of attempts to get the bacon just right, crispy enough for that salty hit, but I feel it is a true brain-teaser, as you have a very familiar flavour of bacon, but in an entirely wrong scenario – ice cream, the saltiness and sweet combo really works though, surprisingly so.

      Same for my rhubarb and custard ice cream, inspired by a childhood sweet that we used to be able to get. I did my utmost to replicate that flavour, but in an ice cream format.       So I am always contemplating flavours, and experimenting. Some flavour combos do not work! I have a few fails, lol. 

      Of course, I love the classics, Mint Choc Chip has got to be one of my favourites, along with a simple Vanilla, you can’t beat a Vanilla ice cream, but it’s also nice to add different layers, textures and flavours on occasion too.
