  • 4-5 fresh lemons
  • 1 cup (240 ml) water
  • 1/2 cup (100 g) granulated sugar or honey (adjust to taste)
  • Optional: a few fresh mint leaves for added flavour

Instructions

  1. Prepare the Lemons: Start by washing the lemons thoroughly. Cut them in half and squeeze out the juice into a bowl. You should get about 1 cup (240 ml) of lemon juice. Remove any seeds.
  2. Make the Lemonade Base: In a small saucepan, combine the water and sugar (or honey). Heat over medium heat, stirring occasionally, until the sugar is completely dissolved. Remove from heat and let it cool slightly.
  3. Mix the Lemonade: In a large jug, combine the freshly squeezed lemon juice and the sugar-water mixture. Stir well to combine. If you like, you can add a few fresh mint leaves for an extra burst of flavour.
  4. Fill the Moulds: Pour the lemonade mixture into ice lolly moulds, leaving a little space at the top for expansion. Insert the sticks and place the moulds in the freezer.
  5. Freeze: Allow the lollies to freeze for at least 4-6 hours, or until completely solid.
  6. Enjoy: Once frozen, remove the lollies from the moulds by running warm water over the outside of the moulds for a few seconds. Enjoy your homemade lemonade ice lollies straight away!

  • Can I reduce the sweetener?
    • Absolutely! Start with less sugar/honey and add more to taste. Or for that super tart zing, leave it out altogether.

  3. Thank you for this information and idea packed blog post. I didn’t realise the humble lemon had so many health benefits. Some of the other fruits you have suggested would combine nicely with lemon to give a more complex ice lolly. Have you tried adding herbs, mint is the first one that comes to mind but lavender and coriander could also work. You’ve inspired me to experiment.

      Yes, the humble Lemon! Amazing what gifts nature has given us isn’t it? And agreed there are many other fruits that can add to and enhance lemons in the lollies. Most frequently I’ll just add chopped-up strawberries, raspberries etc to my lollies, to add some texture and additional flavour.

      Herbs? Yes, I will often add some herbs, as you say these can add interesting flavour profiles.

      You’ve certainly got me thinking now about how herbs might work in Ice Lollies and I’ll have to do some experimenting to try this out! We do have a Homemade Pimms and Lemonade Ice Cream Recipe which incorporates mint in ice lollies and that works really well, so I believe herbs will work in ice lollies, but I’m still going to play around with some flavours and see. Watch this space…!
