  • 125ml double cream
  • 80g granulated sugar

  • 100g high-quality dark chocolate (70% cocoa), chopped or in chips

Instructions:

  1. In a medium saucepan, combine the whole milk and granulated sugar, stirring until the sugar dissolves completely. Heat the mixture over medium heat until it begins to steam, but do not let it boil.
  2. If using a vanilla bean, add the scraped seeds and the empty pod to the milk mixture. If using vanilla extract, skip this step.
  3. Continue to heat the mixture until it’s hot but not boiling, then remove it from the heat.
  4. If using a vanilla bean, cover the saucepan with a lid and let the mixture steep for about 30 minutes. If using vanilla extract, skip this steeping step.
  5. After steeping, remove the vanilla bean pod (if used) and gently reheat the mixture.
  6. Place the chopped dark chocolate in a heatproof bowl. Pour a small amount of the hot milk mixture over the chocolate and let it sit for a minute to soften the chocolate. Then, whisk the mixture until the chocolate is completely melted and smooth.
  7. Gradually pour the remaining hot milk mixture into the chocolate mixture, whisking constantly to combine.
  8. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight to allow the flavours to meld.
