  • 1 ripe honeydew melon (about 700g), peeled, deseeded, and cubed
  • 150g caster sugar (you can replace this with honey if preferred)
  • 120ml water
  • Juice of 1 lime
  • Fresh mint leaves for garnish (optional)

Method:

  1. In a small saucepan, combine the caster sugar and water over low heat, stirring gently until the sugar dissolves completely. Once dissolved, remove the syrup from the heat and let it cool to room temperature.
  2. While the sugar syrup cools, prepare the honeydew melon by peeling it and removing the seeds. Cut the melon into small cubes and place them in a blender or food processor.
  3. Pour the cooled sugar syrup over the honeydew melon cubes in the blender. Add the freshly squeezed lime juice for a zesty zing that balances the sweetness of the melon.
  4. Blend the mixture until smooth and thoroughly combined. Taste the blend and adjust the sweetness or tartness by adding more sweetener or lime juice, respectively, according to your taste preference.
  5. Once the mixture reaches the desired taste, transfer it to a lidded container suitable for freezing, ensuring it has enough space for expansion during the freezing process.
  6. Cover the container and place it in the freezer for about 4-6 hours or until the sorbet is solid and scoopable.
  7. Every 1-2 hours take the sorbet from the freezer and stir through and then replace back into the freezer, this prevents ice crystals from forming.
  8. When ready to serve, take the sorbet out of the freezer and let it sit at room temperature for a few minutes to soften slightly, making it easier to scoop. Garnish with fresh mint leaves for an added burst of aroma and colour (optional).
