  • 1 ripe honeydew melon (about 700g), peeled, deseeded, and cubed
  • 150g caster sugar (you can replace this with honey if preferred)
  • 120ml water
  • Juice of 1 lime
  • Fresh mint leaves for garnish (optional)

Method:

  1. In a small saucepan, combine the caster sugar and water over low heat, stirring gently until the sugar dissolves completely. Once dissolved, remove the syrup from the heat and let it cool to room temperature.
  2. While the sugar syrup cools, prepare the honeydew melon by peeling it and removing the seeds. Cut the melon into small cubes and place them in a blender or food processor.
  3. Pour the cooled sugar syrup over the honeydew melon cubes in the blender. Add the freshly squeezed lime juice for a zesty zing that balances the sweetness of the melon.
