- 300ml double cream
- 300ml whole milk
- 100g honey
- 1 tbsp dried lavender flowers (culinary grade)
- 4 large egg yolks

- Heat the milk and cream in a saucepan over low heat. Add the dried lavender and let it steep for 10 minutes.
- Strain the lavender out and return the liquid to the heat. Stir in the honey.

- Return to the saucepan and heat gently, stirring until the mixture thickens (don’t boil).

(Prep time: 25 minutes; Churning time: 20-25 minutes)

It’s hard to pick just one favourite, but if we had to, the Honey & Lavender Ice Cream is definitely up there – it’s so light and fragrant, making it perfect for a springtime treat, plus the flavour combo is quite unexpected, so there’s a surprise in there too!
That’s a great question about dairy-free alternatives! While we didn’t specifically highlight them in this article (something we’ll be updating – thank you for the nudge!), many of these recipes can be adapted using coconut milk, almond milk, or oat milk for a creamy, plant-based version.
