Here’s a recipe for making Cinnamon Ice Cream:
Ingredients:
- 300ml whole milk
- 300ml double cream
- 150g granulated sugar
- 6 large egg yolks
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- A pinch of salt
Method
- Prepare the base: In a saucepan, combine the milk, cream, and half the sugar. Heat gently until almost simmering, stirring to dissolve the sugar.
- Whisk the yolks: In a separate bowl, whisk egg yolks with the remaining sugar until pale and slightly thickened.
- Temper the eggs: Slowly pour a little of the hot milk mixture into the yolks, whisking constantly to avoid scrambling.
- Combine and cook: Return the tempered yolks to the saucepan. Stir over low–medium heat until the custard thickens enough to coat the back of a spoon. Do not boil.
- Flavour: Remove from heat. Stir in cinnamon, vanilla, and a pinch of salt. Let cool.
- Chill: Cover and refrigerate for at least 2 hours, or overnight for best flavour.
- Churn: Pour into an ice cream maker and churn until softly set.
- Freeze firm: Transfer to a lidded container and freeze for at least 4 hours, until scoopable.

Making Churros is so much easier than you might think, so why not try making your own?
Here’s a simple recipe for making your own homemade Churros;
Ingredients
- For the dough:
- 240 ml water
- 35 g caster sugar
- ½ tsp salt
- 2 tbsp vegetable oil
- 130 g plain flour
- For frying:
- Vegetable oil, for deep frying
- For coating:
- 50 g caster sugar
- ½ tsp ground cinnamon
Method
- Make the dough: In a saucepan, combine water, sugar, salt, and oil. Bring to the boil. Remove from heat and add flour all at once, stirring until a ball of dough forms.
- Heat the oil: In a deep fryer or heavy pan, heat vegetable oil to 190 °C (test with a thermometer or a small cube of bread — it should brown in ~60 seconds).
- Pipe the churros: Transfer dough to a piping bag fitted with a star nozzle. Pipe 10 cm (4 in) strips directly into the hot oil, cutting with scissors.
- Fry: Cook a few at a time, turning once, until golden brown (about 2 mins per side). Drain on kitchen paper.
- Coat: Mix sugar and cinnamon in a shallow dish. Roll warm churros in the mixture until evenly coated.

- Prepare the dough: Make the churro dough following the Classic Churros Recipe above.
- Pipe into loops: Transfer dough to a piping bag with a star nozzle. Pipe loops or spirals of dough directly into the hot oil, cutting with scissors once shaped.
- Fry: Cook each loop until golden brown, turning for even colour (about 2 mins per side). Remove with a slotted spoon and drain on kitchen paper.
- Coat: Mix the sugar and cinnamon in a shallow dish. Roll churro loops while warm so the coating sticks evenly.
- Drizzle (optional): Add chocolate, caramel, or dulce de leche over the loops for extra indulgence.
- Serve: Place a scoop (or two!) of homemade cinnamon ice cream in the centre of each loop and enjoy.

Transfer the churros disc to the hot oil, gently drop it in (being careful of hot oil splashing) and allow to fry.
Once golden brown, remove with a slotted spoon and place on kitchen paper to soak up the excess oil.
Dust with Cinnamon and sugar mix and allow to cool. Once cooled, you can add a scoop of Cinnamon Ice cream between two churros discs and squish them together. Ta naa, a perfectly portable, no dishes, cinnamon and churros ice cream sandwich!
