  • 500ml double cream (or full-fat coconut cream for dairy-free)
  • 250ml whole milk (or oat milk for dairy-free)
  • 150g caster sugar
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • 150g Oreo cookies (or your favourite biscuits), roughly chopped

Method:

  1. Make the base
    In a mixing bowl, whisk cream, milk, sugar, vanilla, and salt until the sugar dissolves.
  2. Chill it down
    Cover and refrigerate the mixture for at least 1–2 hours (or overnight for best flavour).
  3. Churn it up
  • With an ice cream maker: Churn according to the manufacturer’s instructions until soft-serve consistency.
  • No churn method: Freeze for 45 minutes, whisk with a fork, then repeat every 30–40 mins for 3–4 hours until thick and creamy – see note below.
  1. Fold in cookies
    Stir chopped cookies through the soft ice cream, leaving a few bigger chunks for texture.
  2. Freeze & serve
    Transfer to a freezer-safe container, cover, and freeze for 2–3 hours until scoopable. Serve in cones or bowls, topped with extra cookie crumbles!
