Now we’ve learned how well these two flavours work together, here’s our recipe and method:

Ingredients:

  • 450g fresh apricots, pitted and chopped
  • 1 tablespoon fresh thyme leaves
  • 150g caster sugar
  • 475ml double cream
  • 240ml whole milk
  • 1 teaspoon vanilla extract
  • 4 large egg yolks
  • Pinch of salt

Instructions:

  • Prepare the Apricots and Thyme:
    • Wash and pit the fresh apricots, then chop them into small pieces.
    • In a small saucepan, combine the chopped apricots, fresh thyme leaves, and 50g of caster sugar. Cook over medium heat, stirring occasionally, until the apricots soften and release their juices. This should take about 5-7 minutes. Remove from heat and let it cool.
  • Make the Base:
    • In a separate saucepan, combine the double cream and whole milk. Heat the mixture over medium heat, stirring occasionally, until it reaches a simmer. Once it simmers, remove it from the heat and set it aside.
  • Whisk the Egg Yolks:
    • In a heatproof bowl, whisk together the egg yolks and the remaining 100g of caster sugar until the mixture becomes pale and slightly thick.
  • Temper the Eggs:
    • Slowly pour a small amount of the hot milk mixture into the egg yolks while continuously whisking. This is to temper the eggs and prevent them from curdling. Gradually add more hot milk, whisking constantly until well combined.
  • Combine and Cook:
    • Pour the egg and milk mixture back into the saucepan with the remaining milk and cream. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. This should take about 5-7 minutes. Do not let it boil.
  • Blend and Chill:
    • Strain the custard mixture through a fine-mesh sieve to remove any curdled bits and the thyme leaves. Mix in the vanilla extract.
    • Add the cooled apricot and thyme mixture to the custard base and blend them together until smooth.
    • Cover the mixture and refrigerate it for at least 4 hours or overnight to chill thoroughly.
  • Churn the Ice Cream:
    • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions. It typically takes about 20-30 minutes to achieve a soft-serve consistency.
      • NB: If you don’t have an ice cream maker, you can still make this recipe. Pour the mixture into a freezer-safe container and freeze. Every 30 minutes, stir the mixture vigorously with a fork to break up ice crystals, repeating this process for about 3-4 hours or until the ice cream is firm.   • Freeze:
    • Transfer the churned ice cream into an airtight container and freeze it for at least 4 hours or until it becomes firm.
  • Serve and Enjoy:
