Here’s our simple and delicious vegan ice cream recipe using coconut milk:

  • 2 cans (400ml each) full-fat coconut milk
  • 150g maple syrup or agave nectar
  • 1 tablespoon vanilla extract
  • A pinch of salt

Optional Mix-Ins:

  • 100g dark chocolate chips
  • 150g fresh berries
  • 100g chopped nuts

Instructions:

  • Prepare the Base:
    • Shake the cans of coconut milk well before opening.
    • Pour the coconut milk into a medium-sized saucepan.
    • Add the maple syrup or agave nectar, vanilla extract, and a pinch of salt.
    • Whisk the mixture until all ingredients are well combined.
  • Heat the Mixture:
    • Place the saucepan over medium heat and cook the mixture, stirring frequently.
    • Heat until the mixture is warm and everything is well incorporated, but do not let it boil.
    • Once heated, remove the saucepan from the heat.
  • Chill the Mixture:
    • Pour the mixture into a heatproof bowl and let it cool to room temperature.
    • Once cooled, cover the bowl with cling film and place it in the fridge for at least 4 hours, preferably overnight. This allows the mixture to chill thoroughly and the flavours to meld.
  • Churn the Ice Cream:
    • After chilling, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions.
    • This process usually takes about 20-30 minutes, but it may vary depending on your ice cream maker.
      • NB: If you don’t own an ice cream maker, you can still make this recipe, you simply pour the mixture into a freezer-safe container and freeze. Every 30 minutes, stir the mixture vigorously with a fork to break up ice crystals, repeating this process for about 3-4 hours or until the ice cream is firm.   • Add Mix-Ins (Optional):
    • If you’re adding mix-ins like chocolate chips, berries, or nuts, add them in during the last 5 minutes of churning.
  • Freeze the Ice Cream:
    • Once churned, transfer the soft ice cream into a lidded, freezer-safe container.
    • Smooth the top with a spatula, then cover the container and place it in the freezer for at least 2 hours to firm up.
  • Serve and Enjoy:
    • Before serving, let the ice cream sit at room temperature for a few minutes to soften slightly for easier scooping.

  1. Wow, this ice cream looks amazing. I can imagine that it must taste amazing too as anything using coconut milk usually does. It would certainly be a slightly healthier option than using cream.

    I just can’t believe how much churning it takes to make the ice cream. Is it just because of the coconut milk or is it usually like this when you make ice cream?

      Thanks for your comment, glad that you appreciated our article and the recipe we shared. Coconut milk is, as you say, amazing and pretty much works with anything, be that savoury or sweet! It’s a very versatile ingredient for sure.

      Hmm, your question re churning? How long it takes to churn? This recipe only calls for 20 minutes of churning, which isn’t very long. There’s cooling time, which simply allows the flavours to meld, and also means when you do churn you get optimum results, but there’s not so much churning.

      Ultimately, you can simply mix the ingredients together, pour the  mixture into a freezer-safe container, and freeze, it is recommended to vigorously stir the mixture every 30 minutes or so to break up any ice crystals that might be forming, which requires a little more work, but not too onerous.

      The churning is required for regular milk and coconut milk recipes alike and helps to add air, which makes ice cream light and creamy, so it is a process that brings the best results.
