I’ll happily confess: I eat mine in a very specific order.

For the ice cream layer (no churn):

  • 300ml double cream
  • ½ can (200g) sweetened condensed milk
  • 1 tsp vanilla extract
  • 4–5 Twix bars, roughly chopped

Chocolate shell:

  • 200g milk chocolate
  • 1 tbsp coconut oil (optional – helps chocolate set smoother)

Biscuit layer:

  • 12 digestive biscuits or shortbread squares
    (You can also split Twix bars lengthways and use as the biscuit layer if you want the FULL Twix experience)

Method:

  1. Make the ice cream base: Whip the double cream to soft peaks. Fold in the condensed milk + vanilla.
  2. Add chopped Twix pieces: Stir gently through the ice cream mixture.
  3. Freeze the ice cream slab: Line a square tin with baking paper. Pour in the mixture and freeze for 3–4 hours until firm.
  4. Cut into sandwich shapes: Lift out the frozen slab and cut into rectangles roughly the size of your biscuits.
  5. Sandwich time: Place a slab of Twix ice cream between two digestives/shortbread biscuits. Freeze 20 minutes to firm up.
