Homemade Tiger Tail Ice Cream Recipe
Ingredients:
For the Orange Ice Cream Base:
- 475 ml double cream
- 240 ml whole milk
- 150 g caster sugar
- 4 large egg yolks
- 120 ml fresh orange juice (from about 2-3 oranges)
- Zest of 1 orange
- 1 tsp vanilla extract
- A few drops of orange food colouring (optional, for a more vibrant orange colour)
For the Black Liquorice Swirl:
- 120 ml water
- 100 g caster sugar
- 60 ml black treacle
- 1 tsp anise extract (or more to taste)
- Black food colouring (optional)
Method:
- Prepare the Orange Ice Cream Base:
- In a medium saucepan, combine the double cream, whole milk, and half of the caster sugar (75 g). Heat over medium heat until the mixture is hot but not boiling, stirring occasionally to dissolve the sugar.
- In a separate bowl, whisk the egg yolks with the remaining sugar until the mixture is pale and slightly thickened.
- Slowly temper the hot cream mixture into the egg yolks by adding a small amount at a time while whisking constantly. This prevents the eggs from scrambling.
- Pour the mixture back into the saucepan and cook over medium-low heat, stirring constantly with a wooden spoon or spatula, until the custard thickens and coats the back of the spoon (about 75°C).
- Remove from heat and stir in the orange juice, orange zest, and vanilla extract. If you want a more vibrant orange hue, add a few drops of orange food colouring.
- Strain the mixture through a fine sieve into a bowl to remove any cooked egg bits and zest, then chill in the fridge for at least 4 hours or overnight.
- Prepare the Black Liquorice Swirl:
- In a small saucepan, combine water, caster sugar, and black treacle. Bring to a simmer over medium heat, stirring until the sugar is fully dissolved.
- Reduce the heat to low and let the mixture simmer gently for about 5 minutes, allowing it to thicken slightly.
- Remove from heat and stir in the anise extract. Adjust the anise to your taste—add more if you prefer a stronger liquorice flavour.
- If using, add black food colouring until you achieve a deep, rich black colour. Let the mixture cool completely.
- Churn the Ice Cream:
- Once the orange base is thoroughly chilled, churn it in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- NB: If you don’t own an ice cream maker, you can still make this recipe, you simply pour the mixture into a freezer-safe container and freeze. Every 30 minutes, stir the mixture vigorously with a fork to break up ice crystals, repeating this process for about 3-4 hours or until the ice cream is firm. - Once the orange base is thoroughly chilled, churn it in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Create the Tiger Tail Effect:
- Transfer half of the churned orange ice cream to a freezer-safe container. Drizzle some of the black liquorice swirl mixture over the top. Add the remaining orange ice cream and repeat with more liquorice drizzle. Use a knife or spatula to gently swirl the mixture, creating that signature “tiger tail” effect. Be careful not to over-mix; you want distinct swirls of black within the orange base.
- Freeze Until Firm:
- Cover the container and freeze the ice cream for at least 4 hours, or until firm.
- Serve and Enjoy:
