• 75g unsalted butter, melted

For the filling:

For the ganache drizzle:
• 100g dark chocolate, finely chopped
• 100ml double cream

Method

1️⃣ Make the base:

  • Crush the chocolate cookies into fine crumbs (a food processor works best, or pop them in a bag and bash with a rolling pin).
  • Mix with melted butter until the mixture resembles wet sand.
  • Press firmly into the base of a lined 20cm springform cake tin. Freeze for 15 minutes to set.
