👀 In the Kitchen

This month’s kitchen adventure was sparked by an unexpected supermarket find: the thickest, most enormous stalks of rhubarb I’ve ever seen — especially so late in the season! I couldn’t resist and came home with a whopping 1.6kg.

I’ll admit, I fretted that it might end up too tart — but there was no need for the worrying. The batch was just tart enough, delivering that familiar, classic rhubarb flavour in a rich, creamy ice cream that’s been a hit all round.

💡 Top Tip: Don’t shy away from late-season rhubarb — it can still be beautifully balanced and full of flavour, perfect for ice cream or sorbet bases.

First, I gently cooked the rhubarb down to a soft, jammy consistency, then added some fresh double cream, a splash of Lemon juice and some caster sugar, not too much, but enough to override the tartness churned it to creamy perfection in my Ninja Creami.

The result? A bright, refreshing scoop that’s been a hit at home and with friends too.

This batch of rhubarb ice cream even made it to a summer garden gathering, where it earned this lovely praise:

🥳 “It is some of the very best ice cream I have ever tasted. I can’t recommend it highly enough. Well done! Perfect for a summer party!”
