👀 In the Kitchen
This month’s “in the kitchen” feature is all about cherry perfection — from prepping those plump, juicy fruits to taste-testing with a very discerning two-year-old!
🍒 Classic Cherry Ice Cream
This month, I managed to get my hands on a beautiful batch of plump, glossy cherries — deep in colour, ripe, and bursting with summer flavour. Once pitted and chopped, I simmered them gently on the hob to soften and bring out that rich cherry tang, resulting in a vibrant, glossy sauce.
Once cooled, I gave it a taste to gauge just how tart it was and decided to add a little honey to balance things out.
As always, I tasted as I went — a key tip for any homemade ice cream maker. It’s much easier to sweeten gradually than to fix an overly sugary batch, especially since freezing mutes sweetness.
From there, I blended 300g of cherry purée with 250ml of double cream and another generous splash of honey. Just a few blitzes in the blender and the base was ready to go into my Ninja Creami tubs.
Once frozen, I processed the mixture using the Ice Cream setting on my Ninja Creami — and while the flavour was bright and punchy, it was still a little on the tart side. A swirl of honey over the top, a quick mix-in, and… perfection.
💡 Tasting throughout is key — it’s much easier to add sweetness than to fix an overly sweet mix, and keep in mind that freezing dulls flavours. I always recommend adjusting after that first post-churn taste!
As a final test, I took a tub to my step-daughter’s little sister, a very discerning two-and-a-half-year-old, and her review? “This is the best ice cream ever!” I’ll take that as a win.
