Prosecco and Strawberry Ice Cream Recipe

This recipe combines the sweet, bubbly essence of Prosecco with the natural tartness of strawberries. Serve it as a dessert at your New Year’s party, or enjoy a scoop as the clock strikes midnight!

Ingredients

  • 200ml (7 fl oz) Prosecco
  • 300g (10½ oz) fresh strawberries, hulled
  • 150g (5 oz) granulated sugar
  • 250ml (9 fl oz) double cream
  • 250ml (9 fl oz) whole milk
  • 4 large egg yolks
  • 1 tsp vanilla extract

Method

  • Prepare the Strawberries: Place the strawberries and 50g of the sugar into a blender or food processor. Purée until smooth. If you prefer a seedless texture, strain the mixture through a fine sieve. Set aside.
  • Make the Ice Cream Base: In a medium saucepan, heat the milk, cream, and vanilla extract over low heat until it just starts to steam—don’t let it boil.
  • Whisk the Egg Yolks and Sugar: In a separate bowl, whisk the egg yolks with the remaining 100g of sugar until pale and creamy. Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to avoid scrambling the eggs.
  • Cook the Mixture: Pour the combined mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon. This is your custard base. Remove from the heat and allow it to cool completely.
  • Incorporate the Prosecco and Strawberries: Once the custard is cool, gently stir in the Prosecco and the strawberry purée. Mix until well combined.
  • Chill and Churn: Chill the mixture in the refrigerator for at least 4 hours, or overnight if possible. Then churn it in an ice cream maker according to the manufacturer’s instructions.
    • NB: If you don’t have an ice cream maker, you can still make this recipe, you simply pour the mixture into a freezer-safe container and freeze. Every 30 minutes, stir the mixture vigorously with a fork to break up ice crystals, repeating this process for about 3-4 hours or until the ice cream is firm.   • Freeze and Serve: Transfer the churned ice cream to an airtight container and freeze for at least 2 hours to firm up. Let the ice cream sit at room temperature for 5–10 minutes before serving for the perfect scoopable texture.

    A wonderful recipe idea for the new year, a combination you can not go wrong with! I also really like how the ingredients mentioned are also those which one would usually already have at home, easy to follow and not complicated.
