- 750ml whole milk
- 360ml double cream
- 200g sugar, divided
- 1 tsp salt
- 2 tbsp corn syrup
- 4 large egg yolks (room temperature)
- 1 tsp cornflour
- 90g Funfetti cake mix
- 1 tbsp vanilla extract
- 2–4 tbsp sprinkles

- Heat the milk, cream, and half the sugar in a saucepan over medium heat, stirring until steaming (but not boiling).
- In a small bowl, mix the remaining sugar, salt, corn syrup, egg yolks, and cornflour.
- Slowly whisk 1 cup of the hot milk mixture into the egg mixture, then return everything to the saucepan.
- Stir constantly until the mixture thickens enough to coat the back of a spoon.
- Add Cake Mix:
- Stir in the Funfetti cake mix until smooth. Pour the base into a freezer bag and submerge it in an ice bath to cool completely.
- Chill and Churn:
- Once cool, stir in the vanilla extract. Chill in the fridge for 2–4 hours.
- Pour the mixture into the ice cream maker and churn according to the manufacturer’s instructions.
- Add sprinkles during the final 5 minutes of churning.
- Freeze:
