Dubai-Style Pistachio Chocolate Ice Cream Recipe

(Prep Time: 15 mins (plus chilling) | Churn Time: 25 mins | Freeze Time: 4–6 hrs)

For the ice cream base:

  • 300ml double cream
  • 300ml whole milk
  • 4 large egg yolks
  • 100g caster sugar
  • ½ tsp fine sea salt
  • 1 tsp vanilla extract (optional)

For the pistachio chocolate swirl:

  • 100g pistachio paste or butter (unsweetened)
  • 3 tbsp sweetened condensed milk
  • 100g dark or milk chocolate, melted
  • Optional: ½ tsp orange blossom or rose water for a floral note
  • Crushed wafers or crisp filo pastry shards for texture (optional but fab!)

Method:

  1. Make the custard base:
  • In a saucepan, gently heat the milk and cream until steaming but not boiling.
  • Whisk together the egg yolks and sugar until pale and creamy.
  1. Temper the eggs:
  • Slowly pour the hot milk into the egg mixture, whisking constantly, then return the mixture to the pan.
  1. Thicken gently:
  • Stir continuously over low heat until the custard thickens enough to coat the back of a spoon.
  • Remove from heat, add salt and vanilla, and let cool completely. Chill for 4 hours or overnight.
  1. Prepare your pistachio swirl:
  • In a bowl, combine pistachio paste, sweetened condensed milk, and floral water if using.
  • Set aside. Separately melt your chocolate.
  1. Churn and swirl:
  • Once chilled, churn your ice cream base in a machine.
  • Just before it’s fully done, ripple in the pistachio mixture, drizzle melted chocolate, and sprinkle wafers or crushed pastry for crunch.
  1. Freeze:
  • Transfer to a lidded container and freeze for 4–6 hours or overnight.
