A Creamy Homemade Pistachio Ice Cream.
Seeing as these little green gems are packed full of goodness, it makes sense to us to create an indulgent homemade ice cream to thoroughly enjoy them.
- 300ml whole milk
- 300ml double cream
- 130g caster sugar
- 150g unsalted pistachio nuts (shelled and unsalted)
- 4 large egg yolks
- 1 tsp pure vanilla extract
- Start by making the pistachio paste. Place the pistachio nuts in a food processor and blend until they form a smooth paste. You may need to scrape down the sides of the processor and blend again a few times to achieve the right consistency. Set the pistachio paste aside.
- In a medium saucepan, heat the milk and double cream over medium heat until it begins to steam. Do not let it boil.
- While the milk and cream are heating, in a separate mixing bowl, whisk together the egg yolks and sugar until they become pale and slightly thickened.
- Once the milk and cream are steaming, gradually pour a small amount into the egg yolk mixture while whisking constantly. This is to temper the eggs and prevent them from curdling.
- Pour the egg yolk mixture back into the saucepan with the remaining milk and cream. Cook over low heat, stirring constantly with a wooden spoon or spatula, until the mixture thickens enough to coat the back of the spoon. This should take about 5-7 minutes. Be sure not to let it boil.
- Remove the mixture from the heat and stir in the pistachio paste and vanilla extract. Mix until well combined.
- Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or until it’s completely chilled.
- Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. This usually takes about 20-25 minutes.
- NB: If you don’t have an ice cream maker, you can still make this recipe. Pour the mixture into a freezer-safe container and freeze. Every 30 minutes, stir the mixture vigorously with a fork to break up ice crystals, repeating this process for about 3-4 hours or until the ice cream is firm. - Transfer the churned ice cream to an airtight container and freeze for an additional 2-4 hours, or until it reaches your desired consistency.
