  • 200ml Pimm’s No.1
  • 200ml lemonade
  • 300ml double cream
  • 150ml whole milk
  • 150g caster sugar
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Fresh mint leaves, finely chopped
  • Mixed berries (strawberries, raspberries, blackberries) for garnish
  • Cucumber slices for garnish

Instructions:

  • Prepare the Pimm’s mixture:
    • In a bowl, combine the Pimm’s No.1 and lemonade. Set aside.
  • Mix the cream base:
    • In a separate bowl, whisk together the double cream, whole milk, and caster sugar until the sugar is fully dissolved.
    • Stir in the lemon zest and juice for a zesty kick.
  • Combine and chill:
    • Gradually add the Pimm’s mixture to the cream base, whisking continuously to ensure it’s well combined.
    • Stir in the finely chopped mint leaves.
    • Cover the mixture and refrigerate for at least 2 hours, or until thoroughly chilled.
  • Churn the ice cream:
    • Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
      • NB: If you don’t own an ice cream maker, you can still make this recipe, you simply pour the mixture into a freezer-safe container and freeze. Every 30 minutes, stir the mixture vigorously with a fork to break up ice crystals, repeating this process for about 3-4 hours or until the ice cream is firm.   • Freeze until firm:
    • Transfer the churned ice cream to a lidded container.
    • Freeze for at least 4 hours, or until firm.
  • Serve:
    • Scoop the ice cream into bowls or cones.

  2. What an interesting article on an ice cream that most would not have thought of making. It surely is a twist on a very classic drink the epitomises an English summer. I’m curious about the ice cream not churning and setting if too much alcohol is added. Is there a ratio that you use as a rule? Does this just apply to alcohol or any liquid flavour you add?       You’re right to question whether the ice cream would set sufficiently with the use of alcohol.

      As our article explained, there is a fine balance when using alcohol in ice cream making. Alcohol can act as an anti-freeze and stop ice cream from setting, there is a knack to it.
