👀 In the Kitchen

This month’s kitchen adventures turned into a full-on orchard harvest! A friend of mine invited me to raid his garden of fruit trees, and I came home with over 13kg of apples and pears — Bramleys, Cox’s, Granny Smiths, Golden Delicious, Comice pears, Conference pears, some Sweet Williams, and more. Nature’s bounty at its very finest!

With so much fruit, the kitchen quickly became a crumble factory. Apple and pear crumbles were baked (and devoured – family super happy 😁), each topped with cinnamon and a sprinkle of brown sugar for that golden, crunchy crust. Honestly, nothing tastes more like September, even though it was August!

But it got me thinking: why don’t we ever see apple ice cream? Pears, yes — they make wonderful sorbets and ice creams — but apples? Not so much, so I used some of the apples for an ice cream, and my experiment proved why: apples’ flavour is mild and their texture isn’t quite right for a creamy churn.

That said, caramelised apples or a ripple of apple sauce can work beautifully when swirled through a vanilla base. We’ll get into this more with our upcoming article – Why Don’t We See Apple Ice Cream?

Still, I wasn’t going to let pears be overshadowed. I simmered down a batch and made a simple pear sorbet: just pears, their own braising juice, and a touch of sugar. The result? Light, refreshing, and super pear-y. 🍐

Just look at that pear sorbet — smooth, glossy, and bursting with freshness!

And as if the orchard haul wasn’t enough, my neighbour’s boys dropped by with an early batch of plump blackberries. With cream running low, I split the fruit into two batches: one ice cream and one frozen yoghurt.

The blackberries were surprisingly plump and sweet for such an early harvest, although still a little tart, so I covered them with a little sugar to help macerate them. I simmered them briefly to break them down, I even sieved them to get rid of those pips (optional), and then blitzed the mixtures in my Ninja Creami.

Both the ice cream and the frozen yoghurt versions were a hit — but the froyo got the ultimate seal of approval shouted over the garden fence: “BEST ICE CREAM EVER!!!”

“Just look at that colour! Blackberries simmered down into the richest juice — a jewel-toned base that turned into both ice cream and froyo. Proof that late-summer fruit really is nature’s magic.”

August’s kitchen was full of scoops, crumbles, and neighbourly treats — and while most of it’s already been scoffed, I can’t wait to see what September’s harvest serves up next!
