Wimbledon is fast approaching, and Strawberries and Cream are the designated dessert during Wimbledon. With strawberries at their peak now, it’s time to get your strawberry ice cream desserts prepared.

During Wimbledon fortnight, fans consume over 38.4 tonnes of strawberries — that’s around 1.92 million berries, all hand-picked from farms in Kent, delivered fresh every morning, and served with cream. 🍓

Behind the Kitchen Door…

🍫 Homemade Chocolate Bar Edition

This month, the ice cream machine took a little breather while my chocolate moulds got a serious workout… A side quest, with delicious results.

It all started when my little one became obsessed with those Dubai-style chocolate bars — rich, creamy, filled with kunafa and pistachio — but wildly expensive and rather difficult to get hold of the legit ones.

So I thought: I’ll make them myself. How hard can it be?

Turns out… chocolate work is an art, and hats off to all those chocolate makers out there!

I ordered the moulds, sourced kadayif (raw kunafa), pistachio paste, and watched more YouTube videos on tempering chocolate than I’d like to admit.

The process involved:

  • Prepping the kadayif with butter until golden
  • Layering white chocolate marbling inside the moulds
  • Filling with milk chocolate, pistachio paste (or tahini, though we preferred without), then sealing and setting

The result? A perfectly tempered snap, stunning marble swirls, and one very happy Dubai-chocolate-loving lil’ munchkin.

But of course, my son had other ideas…

“Eeuw! I don’t want the green stuff — can you make it like a KitKat or Twix!”

So next came Caramel Wafer Bars — layered with salted caramel, crunchy wafers, and that same beautiful marble finish. Another hit.

Several batches later, so much chocolate tempering, and everyone’s happy. Although now I’ve set myself up, as they’re all hoping for more! Even my neighbour’s boy has since asked me to make some more of those chocolate bars (it was his mum’s birthday, so she also got lucky with a caramel/wafer bar made for her birthday).

Not ice cream this time… but definitely a Frosted Fusion!
