🕐 Respect the 24-hour freeze:

Yes, you can cut the freeze time perhaps 8 hours, sometimes push it to 6, but really, it does make a difference to the outcome of the texture.

Even if your freezer feels cold enough, rushing this step can mean icy or inconsistent textures. I always prep extra tubs in advance so I’ve got backup ready to go.
