Its comforting warmth, deep caramelised flavours, and soft texture make it a go-to dessert for the colder months, particularly during the festive season.
Pairing this indulgent dessert with rum and raisin ice cream takes it to an entirely new level. The creamy ice cream, infused with the gentle warmth of rum and the sweet chewiness of raisins, beautifully complements the sticky, dense pudding.

Ingredients for Sticky Toffee Pudding:
- 175g dates, pitted and chopped
- 250ml boiling water
- 1 tsp bicarbonate of soda
- 80g unsalted butter
- 150g dark muscovado sugar
- 2 large eggs
- 175g self-raising flour
- 1 tsp vanilla extract
Toffee Sauce:
- 150g light brown sugar
- 300ml double cream
- 50g butter
Method:
- Preheat oven to 180°C (160°C fan). Grease and line a baking dish.
- Soak the dates in boiling water and stir in the bicarbonate of soda. Set aside.
- Cream butter and sugar until fluffy. Beat in eggs one at a time, then fold in flour and vanilla.
- Add the date mixture, stir well, and pour into the prepared dish. Bake for 30–35 minutes until risen and firm.
- For the sauce, melt sugar, cream, and butter in a saucepan, stirring until smooth.
