The Joy of Combining Strawberries and Cheesecake in Ice Cream
There’s something quite magical about the combination of strawberries and cheesecake in ice cream, quite delicious. This flavour pairing brings together the best of all worlds: the creamy, tangy richness of cheesecake and the sweet, juicy freshness of strawberries, capped off by the cooling smoothness of ice cream. Each bite offers a delicious contrast of textures and tastes, making it a truly irresistible treat. What better combination?
Strawberries, with their natural sweetness and slight tartness, complement the smooth and velvety texture of cheesecake. The berries provide a burst of fruity flavour that cuts through the richness of the cream cheese, creating a harmonious balance that is both refreshing and indulgent.
Whether you’re a die-hard strawberry lover, a cheesecake enthusiast, or simply love ice cream, this homemade recipe is sure to become a new favourite in your dessert repertoire.
Why Homemade Ice Cream Surpasses the Shop-Bought Varieties
The popularity of this combination is evident in products like Ben & Jerry’s Strawberry Cheesecake Ice Cream, which has become a fan favourite.
But when it comes to ice cream, homemade always takes the cake (or in this case, the cheesecake).
What makes homemade versions even more special is the ability to use fresh, high-quality ingredients and customise the recipe to suit your taste. Imagine ripe strawberries, picked at the peak of their sweetness, swirled into a creamy cheesecake base made from real cream cheese and rich double cream all combined and frozen into a decadent dessert that is not only delicious but also far superior to any shop-bought variety.
Making your own ice cream at home is not only far more economical but also significantly healthier. You have complete control over the ingredients without any unnecessary additives or preservatives being added.
Plus, there’s something incredibly satisfying about creating your own batch of ice cream, tailored exactly to your taste preferences. Whether you’re a seasoned chef or a kitchen novice, we’ve got you covered. So, let’s get started on this berry delightful recipe.
The Cream of the Crop: Gathering Your Ingredients
From selecting the finest ingredients to mastering the techniques of bringing it all together, you’ll find all the tips and tricks you need here to create your very own strawberry cheesecake ice cream masterpiece.
Starting with the right ingredients is essential. Here’s a guide to selecting the best components to ensure your ice cream has that creamy, rich, and tangy flavour that makes cheesecake so irresistible.
Selecting the Juiciest Strawberries for a Robust Flavour
The foundation of your strawberry cheesecake ice cream lies in the strawberries. Opt for the juiciest, ripest berries you can find, as their natural sweetness and vibrant flavour will elevate your ice cream.
Look for strawberries that are bright red, firm to the touch, and have a fresh aroma. Avoid any that are overripe or have a mushy texture, as these can make the ice cream too watery and less flavourful.
Cream Cheese and Double Cream: the Backbone of Your Ice Cream’s Richness
Cream cheese and double cream are crucial for achieving the creamy, luxurious texture of your ice cream. The cream cheese provides a tangy, slightly sweet flavour that mimics the classic cheesecake taste. Choose full-fat cream cheese for the richest flavour and smoothest texture. The double cream adds a silky richness and helps create a smooth consistency. Using high-quality, full-fat double cream will give your ice cream that indulgent, creamy mouthfeel.
Sweeteners and Flavour Enhancers: Caster Sugar, Vanilla Extract, and a Pinch of Salt
Sweeteners and flavour enhancers play a significant role in balancing the flavours and ensuring the perfect sweetness.
- Caster sugar is ideal for this recipe as it dissolves easily and blends seamlessly into the ice cream base.
- Vanilla extract adds a warm, aromatic flavour that complements the cream cheese and strawberries.
- A small pinch of salt helps to enhance all the flavours and balance the sweetness, making the ice cream taste richer and more complex.
Optional Extras: Crushed Digestive Biscuits for a Cheesecake Base Twist
To give your ice cream a familiar cheesecake twist, consider adding crushed digestive biscuits. These can be folded into the mixture or swirled in after churning.
The biscuits provide a hint of buttery crunch that replicates the base of a classic cheesecake, adding a satisfying textural contrast.
This step is optional—if you prefer a smoother texture, you can leave them out.

Achieving the Cheesecake Flavour and Textural Profile
Replicating the iconic cheesecake flavour and texture in an ice cream requires a deft touch.
The key is to blend the tanginess of the cream cheese with the creamy richness of the double cream, achieving a balance that mirrors the cheesecake experience. The texture should be smooth and creamy, reminiscent of a rich cheesecake filling, with just enough structure to hold its shape but still remain soft and scoopable.
With the right ingredients and a bit of patience, you’ll be able to achieve that perfect cheesecake flavour and texture in your homemade ice cream.
So now we’ve talked about the flavour combination and the ingredients, let’s make a Homemade Strawberry Cheesecake Ice Cream!

Ingredients:
For the strawberry sauce:
- 300g fresh strawberries, hulled and chopped
- 50g caster sugar
- 1 tablespoon lemon juice
For the cheesecake ice cream base:
- 200g cream cheese, softened
- 200ml double cream
- 200ml whole milk
- 150g caster sugar
- 1 teaspoon vanilla extract
- 50g digestive biscuits, crushed (optional, for a biscuit swirl)
Method: (With an Ice Cream Maker)
- Prepare the strawberry sauce:
- In a medium saucepan, combine the chopped strawberries, 50g of caster sugar, and the lemon juice.
- Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens (about 10-15 minutes).
- Remove from heat and let the strawberry sauce cool completely. You can speed up this process by placing it in the fridge.
- Make the cheesecake ice cream base:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the caster sugar and continue to beat until well combined.
- Gradually add the double cream, whole milk, and vanilla extract, mixing until the mixture is smooth and well combined.
- Chill the mixture:
- Cover the bowl with cling film and refrigerate the mixture for at least 2 hours, or until thoroughly chilled.
- Churn the ice cream:
- Pour the chilled cheesecake mixture into your ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes until it reaches a soft-serve consistency.
- Combine the elements:
- Once the ice cream is churned, gently fold in the cooled strawberry sauce, creating swirls. If you’re using digestive biscuits, fold in the crushed pieces at this stage.
- Freeze the ice cream:
- Transfer the mixture to a lidded container and freeze for at least 4 hours, or until firm.
- Serve and enjoy:
- When ready to serve, let the ice cream sit at room temperature for a few minutes to soften slightly, making it easier to scoop.

- Pour the mixture into a large, shallow container or a loaf tin. Cover with cling film or a lid.
- Place the container in the freezer.
- After 45 minutes, remove it from the freezer and stir the mixture vigorously with a fork or whisk, breaking up any ice crystals that have formed. Return to the freezer.
- Repeat this stirring process every 30 minutes for about 3-4 hours, or until the ice cream is firm but creamy.
- Serve and enjoy:
- When ready to serve, let the ice cream sit at room temperature for a few minutes to soften slightly, making it easier to scoop.

This is an awesome recipe, and I want to stress the importance of making your own rather than buying a commercial ice cream. You can select fresh, organic, and non-GMO ingredients without preservatives or artificial additives.Every year, every country produces a list of the twelve worst fruits and vegetables to eat when pesticides are added. Every year strawberries are in the top three because they have holes which allow the pesticides to stay in, and their porous skin means that they are absorbed into the fruit.
Hi Catherine,
Thank you for your comment and your insights. I did not know that about strawberries! That said, I can’t say I am surprised; our foods are not what they were 30 years ago.
But as you quite rightly have expressed, all the more reason to buy the freshest that’s available, ideally organic, and make your own.
That is all that we are about here at Frosted Fusions, making delicious homemade ice creams, with healthy and fresh ingredients and above all, no preservatives or nasty extras.
I started making homemade ice creams because I was so concerned about the amount of unnecessary extras that I was noticing being added to our foods and I wasn’t content with that, especially for my kids.
