Homemade Raspberry Ripple Ice Cream Recipe
Ingredients:

- 250ml whole milk

- 4 large egg yolks
- 1 tsp vanilla extract

For the Raspberry Swirl:
- 300g fresh or frozen raspberries
- 100g granulated sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch (optional, for thickening)
Instructions:
- Prepare the Raspberry Swirl:

- In a medium saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat, stirring frequently, until the raspberries break down and the mixture begins to thicken, about 10 minutes.
- If a thicker consistency is desired, dissolve cornstarch in a small amount of water and add to the mixture, cooking for an additional 2-3 minutes until thickened.
- Remove from heat and allow to cool completely. Once cooled, strain through a fine mesh sieve to remove seeds, if desired.
- Make the Vanilla Ice Cream Base:

- Churn the Ice Cream:

- NB: If you don’t own an ice cream maker, you can still make this recipe, you simply pour the mixture into a freezer-safe container and freeze. Every 30 minutes, stir the mixture vigorously with a fork to break up ice crystals, repeating this process for about 3-4 hours or until the ice cream is firm. - Once the ice cream base is thoroughly chilled, pour it into your ice cream maker and churn according to the manufacturer’s instructions. This typically takes about 20-30 minutes.
