Bounty-Style Coconut Ice Cream Bars
If you love Bounty bars, this is the ultimate frozen treat—creamy coconut ice cream coated in rich dark chocolate, all without a drop of dairy!
Ingredients
- 400ml full-fat coconut milk
- 120ml coconut cream
- 80g maple syrup or agave syrup
- 1 teaspoon vanilla extract
- 100g desiccated coconut
- 200g dark chocolate (70% cocoa or higher)
- 1 teaspoon coconut oil (for smoother chocolate coating)
Method
- Blend the Ice Cream Base: In a blender, mix the coconut milk, coconut cream, syrup, vanilla extract, and desiccated coconut until smooth.
- Freeze the Mixture: Pour into a lined tray or silicone moulds and freeze for 4–6 hours.
- Melt the Chocolate: In a heatproof bowl, melt the dark chocolate and coconut oil over a pan of simmering water. Let it cool slightly.
- Coat the Bars: Once frozen, dip each bar into the melted chocolate and place on parchment paper. Freeze again for 30 minutes.
- Enjoy! Store in an airtight container in the freezer and eat whenever the craving hits!

- Mix the Base: Whisk together the coconut milk, lime juice, lime zest, and syrup until smooth.
- Chill the Mixture: Refrigerate for at least 2 hours before freezing.
- Freeze & Stir: Pour into a shallow dish and freeze, stirring every 30 minutes for 3 hours to prevent ice crystals.

- 80g maple syrup or agave syrup
- 1 teaspoon vanilla extract
- 50g desiccated coconut, toasted
- 80g dark chocolate, chopped into chunks
Method
- Toast the Coconut: In a dry pan, toast the desiccated coconut over medium heat until golden and fragrant, then set aside to cool.

- Blend Until Creamy: Add the frozen mango and coconut milk to a food processor and blend until thick and smooth.
- Serve Immediately or Freeze: Enjoy as a soft-serve treat, or freeze for an hour for a firmer texture.
