You have such a delectible-looking website, and yes I would love to try toffee apple ice cream, even though we are mid-summer here.
In winter I also tend to use a lot of Cinnamon, nutmeg, and cloves in my cooking. I am not sure what it is about these spices that makes the food so warming.
The only thing I don’t like about making my own ice cream is to remember to churn it once it is in the freezer from time to time. If we skip this will the ice cream still be edible?

As far as we are concerned, Ice Cream should be eaten any and every time of the year! Ha, we’re going to say that of course! Lol.
Toffee Apple is a wonderful treat that always reminds me of childhood, so it’s a wonderful flavour profile to add to ice cream which adds its own layers of cool and texture.
Spices such as Cinnamon, Nutmeg, and cloves are wonderful and as you quite rightly say, they ‘warm’ dishes up immensely and work perfectly in many of our ice cream recipes, like our Cinnamon and Churros Ice Cream, that’s a lovely warming recipe – despite being ice cream!
I hear you regarding sometimes forgetting to churn, I’ve been there a few times myself and yes it can affect the finished texture, of course. The point of churning is to incorporate air into the ice cream whilst moving those dreaded icicles around so they can’t become too big.
