Although, for the record, I would like to say that a finger of fudge was not enough, I wanted more! lol.

Back in the day, the Fudge bar was a simple yet delicious treat – smooth, chocolate-covered fudge, just the right size for a little pick-me-up. While it might not be as easy to find these days, they are available in the Cadburys Heroes selection boxes.

What better way to celebrate it than in ice cream form?

In this article, we’ll share a little background on the Cadbury’s Fudge Bar, along with some varying Fudge style’s and of course, we’ll share a recipe and method for our Chocolate Fudge Ice Cream, complete with a luxurious chocolate fudge sauce swirled through.   • Penuche (US & Italy): Made with brown sugar instead of white sugar, giving it a caramel-like taste with a creamy, fudgy texture.
  • Clotted Cream Fudge (South West England): A luxurious take on traditional fudge, incorporating thick, rich clotted cream for a silky texture and deep dairy flavour.

Homemade Chocolate Fudge Ice Cream Recipe

Our no-churn chocolate fudge ice cream is lusciously creamy, super chocolatey, and loaded with silky fudge sauce. Best of all? You don’t need an ice cream maker!

For the chocolate ice cream:

  • 300ml double cream
  • 200ml condensed milk
  • 50g cocoa powder
  • 100g dark chocolate, melted
  • 1 tsp vanilla extract

For the fudge sauce swirl:

  • 100ml double cream
  • 50g dark chocolate, chopped
  • 30g butter
  • 50g golden syrup or light corn syrup

Method:

  1. Make the ice cream base: In a large bowl, whisk the double cream until soft peaks form.
  2. In a separate bowl, mix the condensed milk, cocoa powder, melted dark chocolate, and vanilla extract until smooth.
  3. Gently fold the chocolate mixture into the whipped cream until fully combined.
  4. Make the fudge sauce: Heat the double cream in a saucepan over low heat. Add the chopped dark chocolate, butter, and syrup, stirring until smooth. Let it cool slightly.
  5. Assemble: Pour half of the ice cream mixture into a freezer-safe container, drizzle over some fudge sauce, then repeat with the remaining ice cream and sauce, swirling it with a knife.
  6. Freeze for at least 6 hours (or overnight) until firm.
