  • Juice of 1 lemon/lime (for brightness, zing and balance)
  • 75ml gin (adjust based on preference, see notes on alcohol content below)
  • A pinch of salt (enhances depth of flavour)

Optional Garnish: Fresh elderflowers, lemon zest, or a drizzle of extra elderflower cordial

Step-by-Step Method

  1. Make the Sugar Syrup
    • In a small saucepan, heat the water and sugar over medium heat, stirring until dissolved.

      Great question re the flavours of Gin, you’re right that gin can vary significantly between brands, which can impact the final flavour of the sorbet.

      London Dry Gin is a crisp, dry gin, with prominent juniper notes and citrus undertones. Brands like Tanqueray or Beefeater work well too. Then you have some gins like Hendrick’s which specifically feature floral notes (rose and cucumber as one instance) which really enhance the elderflower flavour.

      Of course, everyone’s taste preferences vary, so what may work for some, may not for others.

      I personally prefer a less floral gin flavour, so that the elderflower can shine. How about you?
