Gelato has a very unique preparation method. It is made with a higher proportion of milk to cream compared to traditional ice cream, resulting in a lower fat content. This composition allows the flavours to shine through more intensely, providing a true taste of the pure and natural ingredients. Furthermore, Gelato is churned at a slower speed, incorporating less air during the freezing process, resulting in a denser and creamier consistency.

Indulging in gelato is like embarking on a gustatory journey through a myriad of exquisite flavours.

From classic favourites like Stracciatella, made with a simple, sweetened cream flavour, then dressed with a very high-quality, warm chocolate sauce on top, velvety chocolate and refreshing strawberry to more adventurous combinations like pistachio and lavender honey, gelato offers an array of options to suit every palate.

It is the epitome of artful simplicity, where the focus is on using high-quality ingredients to create harmonious and unforgettable taste experiences.

Whether enjoyed in a classic cone, a luscious cup, or paired with delectable toppings, gelato is a celebration of the art and science of frozen desserts. The joy of creating homemade gelato lies not only in its unparalleled taste but also in the pleasure of sharing this artful creation with family and friends, making every moment a delightful celebration of life’s sweetest pleasures.

Learning the basics

Making homemade gelato is a relatively straightforward process that requires a few key ingredients and some patience.

Here’s a basic overview to guide you through the steps:

  1. Ingredients: The primary components of gelato include milk, sugar, egg yolks, and flavorings. You can use whole milk for a creamier texture, but lower-fat milk or plant-based alternatives work too. Additionally, choose high-quality flavourings like fresh fruits, nuts, chocolate, or extracts to infuse your gelato with delicious, natural taste.
  2. Base Preparation: Begin by creating the gelato base, also known as the custard. In a saucepan, heat the milk and sugar until the sugar dissolves. In a separate bowl, whisk the egg yolks. Gradually pour the warm milk into the egg yolks while whisking continuously to avoid curdling.
  3. Cooking the Custard: Pour the mixture back into the saucepan and heat it over low to medium heat, stirring constantly until it thickens. The custard should coat the back of a spoon, and it should not boil. This step is crucial to achieving the creamy and velvety texture of gelato.
  4. Infusing Flavours: Once the custard is ready, remove it from the heat and add your desired flavourings. If you’re using fruits, puree them and strain to remove any seeds or fibres. For chocolate or nut flavours, melt and mix them into the custard. Let the mixture cool to room temperature.
  5. Chilling the Custard: Cover the custard and refrigerate it for several hours or overnight. Chilling allows the flavours to meld, and it helps the mixture to develop the right consistency for churning.
  6. Churning: Once thoroughly chilled, pour the custard into an ice cream maker or gelato machine and follow the manufacturer’s instructions for churning. This process incorporates air and prevents ice crystals from forming, resulting in the smooth and creamy texture of gelato. A key element of the luxurious texture of Gelato is that it is churned slower than Ice Cream, meaning less air is incoporated, thus giving gelato a denser, richer texture. Many Ice Cream makers come with preset programmes that allow this slower churning process. Making it that much easier for you to attain your perfect gelato texture. Check out our post – What is the Best Ice Cream Maker? A detailed review for more information on these Ice Cream Makers.
  7. Storage: Transfer the freshly churned gelato to an airtight container and freeze it for a few hours to firm up before serving. Homemade gelato is best enjoyed within a few days for the best taste and texture.

By following these steps, you can create your own luscious and flavourful homemade gelato to enjoy anytime, either on its own or as an accompaniment to your favourite desserts. The process is not only rewarding but also offers the flexibility to experiment with various flavours and indulge in the rich, authentic taste of gelato – made with love.

  1. So I have tried to make my own ice cream a couple of times.  I have a kitchen aid mixer with an ice cream blender extension thing.  I broke it twice and decided making ice cream was not for me.  I do love the idea of making gelato but am not sure I am willing to buy another mixer.  I’m all about the fruit sorbets.  Making it at home means fresher fruit and great taste.  I’m going to read the mixer reviews too.  Maybe I can figure out what I’m doing wrong.  This is a great article.
